Vinification: Soft pneumatic pressing of the flower must only. First fermentation in steel at a controlled temperature and subsequent refinement on the noble lees for 2/3 months.
Second fermentation: Charmat method with selected yeasts at a constant temperature (13 ° / 14 °) with a particularly long second fermentation (90 days) in order to obtain a fine and constant perlage.
Service temperature: 6° – 8° C

Thin, creamy and persistent perlage. Bouquet of great intensity with notes of yellow pear combined with aromatic notes of great freshness such as grapefruit and Granny Smith, freshness and never aggressive acidity, the body is slender and light with excellent sapidity that gives the product a great drinkability.
Suitable for any occasion, for a sparkling and refined aperitif or to accompany fish-based dishes, fresh cheeses and white meats.
